Jiz - biz recipe from Azerbaijani national cuisine

"Jiz-Biz" is an Azerbaijanidish that is traditionally made with fried sheep liver, kidney, lung, heart, and intestines. Each of the components have to be cooked in a specific order and preparing them requires the use of some very special techniques. Here is the recipe for the favorite dish of Azerbaijani cuisine

  • 300 grams of sheep liver
  • 300 grams of sheep's lungs
  • 200 g of sheep's tail
  • 2 sheep hearts
  • 4 sheep kidneys
  • 3 onions
  • 6-7 potatoes
  • butter
  • salt

1. The liver, lungs, hearts, kidneys, tail are cut into cubes.

2. Wash the chopped parts well, pour water over them and boil for 20 minutes and collect enough.

3. Potatoes are cleaned, washed and cut into cubes and fried in oil.

4. When the potatoes are close to the fries, strain the juice of the lamb pieces and add to the potatoes.
5. When the pieces of lamb are added, the onion is cut into cubes and added.

6. When frying onions, the food is removed from the gas.
